As an Indiana guy I've had access to some nice Black Walnut. Yours is one heck of a nice slab!

You're already doing a fine finish. My only advice to those not experienced with Walnut is to go for oil-type finishes. Water-based poly finishes don't do justice to walnut, especially on end-grain.
