Unfortunately, there will be no internet access in the shop. Just setting the unit to it's highest cooling temp may be my only option other than rigging up a timer to interrupt/open the circuit.

Gene,

My Mitsubishi IR remote has the ability to set a start and a stop time. I haven't tested it but according to the manual, I believe it has the capability you need. Below is a pic of the manual for reference. If you go with another brand, I would guess others might offer similar options to control their mini-split as well. So, this should help with controlling it since you don't have internet access in the new shop.
