Many thanks, everyone. It looks like Watco danish oil is the most popular, with wipe-on poly and spray shellac tied for second. I have some of each on hand, so I think I’ll try them all out on some BB plywood scraps and see which I like best. I’m hoping to toughen up the surface a bit, and also make it cleanable.

normally seal it with shellac or stain and then a few coats of paste wax
